DEDICATED TO EMANUELE SEPE, GREAT WINE – GROWER AND EXEMPLARY FATHER.
The grapes are harvested in the first ten days of November and fermentation takes place for about 9 – 10 days in temperature – controlled steel silos, in order to obtain a good extraction of color and aromas. The aging continues in French oak barriques for at least 9 months. A structured and complex wine, balanced, elegant with a soft hint of French wood, with a well – smoothed tannin. Hints of dried rose, raspberry and cherry on the nose with a base of spicy notes. It pairs well with typical Mediterranean cuisine, aged cheeses, grilled meats, game and dried fruit in shell.
